I never understood why this dessert wasn't called Paris-Brest-Paris to more accurately describe it's origins except that it's more difficult to say. We always had a hard time convincing anyone but displaced Francophiles and cycling enthusiasts to buy it. Here's an updated version of one of the little ditties we used to sing in the kitchen to keep ourselves amused during the night.

pate a choux, pate a choux, pastry grrrl.
bake john a tart as fast as you can.
pipe out the dough, score it with a J, and throw it in the oven for the jerk and you.
